ok, as ridiculous as this may sound, my husband had the same issue, eat carbs right before bed... seriously cookies and milk. He no longer has night terrors.
See a therapist. Or better yet, record yourself sleeping for a week, then watch it and find out what your saying! You should also have a tape recorder running at the same time in case you can't hear wha you're saying on the video. It's weird that I can't wait for you to solve the mystery...
or he could go to a sleep specialist. they make you go to sleep and record not only your movements but brain patterns, the whole package.
Set up a night vision camera and find out for sure.
