YDI, you should have checked the colour of the cheese as now you've had to savour the flavour of mould. Do yourself a favour next time. All hail the letter u.
YDI, it's really not difficult to make sure all your cheese is in date and to check there is no mold in it. And what's with us British thinking we've cooked a meal just becasue we heated up the pasta and the sauce.

Why do people keep saying cheese is 100% mould it deffinitly not. it's the the bi-product of milk exposed to acids and other chemicals to produce a curd. Some cheeses are exposed to healthy strains of mold like gorgonzola which cause the blue veining and Brie but cheese itself is NOT I repeat NOT 100% mould. Idiots.

1. Mould is the way it's spelled in most English speaking countries except the USA so please try not to be so superior you look like morons 2. Cheese isn't mould it's dairy, occasionally cheese have mould added in such as blue cheese, so once again stop trying to sound smart you look like morons 3. Pasta you buy from a regular store is cheap but if OP went to a store where they make fresh pasta it was likely more expensive so for the third time stop trying to sound smart etc etc All that being said OP YDI for not checking and for using pre-grated parmesan on expensive pasta.

I have done almost the same exact thing, except it was shredded cheese. it wasn't past the expiration date, hadn't been opened, and yet it was moldy. so FYL, it can happen. you shouldn't have to check every single food item if you haven't even opened it yet.
