Let them eat the damn thing and get over it. When one of my horses dies, we drag it out to the pasture where no one can see and the coyotes have it gone in two weeks. Don't bother trying to defy nature, you won't win.
Thank you, Sir! As someone who has horses, and had a few die, don't bother trying to bury a thousand and some pound animal. Let the scavengers clean it up, then if you're overly bothered by the sight of the bones, dispose of or bury them.
Booby trap the damn coyotes and shoot them, assuming you have a ranch or things alike, I'm pretty sure you can kill them if they are in your ranch
