We have these things called supermarkets in the UK and they can do pretty amazing canapes, sharing dishes and even the wedding cake and wine glass rental. 3days notice usually but they'd probably rise to the challenge. Otherwise the frozen aisle is your friend.
I agree that you should have tried her cooking before this, but that's water under the bridge. Look up catering companies and see what they can do. I'm assuming that you had someone else arrange the waiters etc. - see if they can help.
This is why you should always have a backup! And sample food before the big event.
