Remember: you don't HAVE to sign a write up. If you think it's bullshit (which it is) don't sign it.
Just because they don't sign it, doesn't mean they don't stand. Signing a write up doesn't mean you agree- it means you are in receipt of the write up. Besides, if you refuse to sign it, the they will just write that you refused to sign it. I used to have a staff like that- amazingly, they don't work for me anymore.
Many write ups have a blank space where you can write your comments on the situation. If OP is forced to sign the write up, I hope he puts his dispute information about the event.

I was written up for not ordering items in my department. my manager was the only one with access to order items. so when my manager wrote me up I replied in writing, "My manager has not given me access to do x so thus I've not been able to perform this action. the way that I will improve is to ask for managerial sign in so I have access to the order screen. I was informed that this is against company policy leaving me unable to access the ordering menu." let me just say my manager's face was priceless. good thing we had a witness there too. I recommend that kind of response.
