Today, the couple I've been housesitting for returned. Apparently, I kept the place too clean, and they don't believe that I actually stayed here. They're refusing to pay me. FML

I've had a similar situation happen with me. I've learned to take a pic with their dogs or while sitting on their couch watching a movie.

As long as you have physical proof that they agreed to pay you a specific amount (email or texts), they are legally obligated to pay you. You can take them to small claims... Or Judge Judy :p

You can try to show a location map with time stamps on where you have been if you have location turned on your phone for proof. If not, you can take it to small claims court but you would probably spend more in fees than what you would actually get paid. I would just consider this a loss and bite the bullet.

You can ask the judge to award you the court costs; there's a section when you file that says what amount you're looking for; you add "plus court costs" in there (may vary from region to region where this is but it's there).
