Take the plate with the hair from her, along with the glass. Tell her you'll have them DNA tested if she sues.
Just to clear this up, the only thing she can sue for is negligence. Negligence has four elements: (1) duty, (2) breach of that duty, (3) causation - both actual and proximate, and (4) damages. Causation is suspect here as well because it's clear she was the cause of the issue but it's still a he-said-she-said situation (the court wouldn't care that you're young btw). Regardless, there are likely no damages from simply finding a hair in your food unless she can prove it caused some sort of psycological problem that manifested into physical symptoms.
Not to mention there's likely security footage in the restaurant of her plucking her own hair and then putting it in her food.

I had this happen too. Except it was a man who finished the entire plate and then wound his hair around his fork. He really won my manager over when he got up and was screaming and swearing in the face of a 17yr old girl.
