Actually i have found that many children's behavior around their parents, can be dramatically different when mom and dad are not present. Sometimes a child that is moody, rude or snotty at home behaves like a perfect angel when away from their parents watchful eyes. The reverse is also common; children that are usually polite, respectful, and well behaved at home can become wild little savages.
This, so much! My kids are often really difficult to handle at home. It's where they "try out" all the bad behaviour that they have seen on other kids, just to see what reaction they will get, or they just blow off steam gathered while out among others. In daycare/school everyone just loves them, it seems as soon as I'm out of their sight they turn into perfect angels. I'm fine with that, generally. I just wish I could see that charming, quiet side of them at home too, sometimes. Then again: better that way than the opposite. Because I, as their mother, will always love them, regardless of their antics. Others won't.
I'm guessing it's that Flemish/French Sarcasm Barrier that makes for such hilarity and violence in Belgium.

That wasn't very professional. If they were having an issue with behavior, they should have brought it to your attention and discussed it.
They were very unprofessional and that should have never happened.

"Kind and well-behaved" is basically the opposite of how I'd describe three professionals reduced to tear-filled laughter after hearing a complement they didn't agree with. If irony were lethal, they might not fare well.
