Maybe the sister in law simply has more close friends than the you. Or friends she has known for longer. It's still a little hurtful - maybe gently suggest you be in charge of something else too. I suggest not kicking up a big fuss about it though - you've have your big day, let her have hers.
I agree. This comment thread has really shocked me with the amount of vindictive, silly, entitled little people there are out there who believe something of this significance is just owed to them.

Punch at a wedding? Don't they save that for the reception? This one shoulda been filtered out...
How did she approach you with this request? Was she sensitive about it, or demanding, or did she just assume you'd be happy to do her bidding? Weddings can be sticky situations with families and whatnot, and she may not have a lot of choice in her own wedding party if her family is demanding. On the other hand, she might just be a stuck-up bitch. I don't know.
