I have an idea. It sounds like they admit to having forgot about it, and are mad that you didn't remind them. Record a conversation with your boss, having them admit they approved the time off, but fired you anyway. This would be great evidence in court. Double check that recording a conversation that you're a party of is legal wherever you are.
I'm from Australia, so there's things that I miss...but seriously, don't the States have ANY unfair dismissal laws?!
