I guess in a few more years no one will be able to eat normal food any more. Nothing I eat makes me sick, it just makes me fat instead. :(
I don't have celiac disease, but I have hypothyroidism and I shouldn't eat gluten. I've been eating gluten my whole life and was diagnosed only a few years ago. I'm thankful that gluten free eating is popular now because I can eat many foods that normally have gluten. That man is a dumb ass and you should talk to his superior about his rudeness.
I'm genuinely curious here. Most of the women on my dad's side of the family have hypothyroidism, but none of them eat gluten free. As long as they keep taking the right amount of hormone supplementation they don't run into any problems. The only potential connection I've heard of between the thyroid and gluten is with Grave's disease (I have this one), but I couldn't find any scientific studies that were able to prove that a gluten-free diet had any effect. Is there a specific form of hypothyroidism that requires a gluten free diet? I'm not an expert by any means, and I'm not saying I don't believe you. Just curious.
I work in an Italian restaurant that has two separate menus and one is gluten free. They make sure everything is separated from the foods with gluten. I never knew what gluten was or that some people can't eat it or they could die until I started working there.
I would like to see him go through that if I eat the wrong thing I can get so sick
I and three other members of my family are gluten-free (all for different reasons, surprisingly, but no celiac). We know how hard it is for you OP. This potential boss is a jerk. Though I've never met anyone like him, I can see how there are people who share his twisted beliefs.

gluten sensitivity is bs, not celiac. celiac is well understood and has been linked to a particular gene. that is about as well understood as it gets.

While I do tend to think gluten free eating is a bit of a fad it takes a special kind of stupid to think a coeliac is following a trend. FYL OP, there's more jobs out there!
