At least you're getting interviews. Maybe you need to perfect your interview techniques and especially find a way to explain such a long spell at uni.
This is not a **** my life, unless there are very good reasons for you taking 11 years to finish your degree, then you are 100% responsible for you now being very unattractive to a future employer. First of all you are 31, that's quite old to get started in a new career. Also if you have been to 56 interviews and none paid off then you really need to look at how you present yourself. You are not entitled to a job, it is something you earn. I hope you have had employment during those last 11 years, othervise i definitely would not even consider hiring you if i was ever put in that position.

If you were a part time student and had a job while studying, no problem. If you were a full time student and took 11 years to do a 4 year degree, then maybe you should consider another career path
Go to some contract employment agencies (temp agencies) they can help you get a foot in the door. Once you're there, knock their socks off, and you'll rise up quickly enough.

Why did it take you that long?
As an employer or someone responsible for hiring, i'd not hire someone who took 11years to complete a 3years programm. It's obvious this won't be efficient and a company is all about efficiency no matter what they tell you.
