Hey, man. Not all of us military personnel are evil. Don't lie, own up to it and I'm sure he'll be reasonable.
Just apologize and pay for the damages. I'm a veteran and we will know accidents happen. I hope it all works out.
Being a military man myself I can say with certainty that he'll appreciate the honesty. Don't let him discover it, own up to what happened.

Don't make it worse. Tell him immediately so you can clean up the coffee before it stains. It is far better than having a hardass military guy believing you broke his window and stained seats on purpose.
