Yeah... you never leave one job for another until contracts are signed.
Always get the offer of the new job in writing before resigning the old one. Verbal offers are just about impossible to enforce and take to court if things go wrong like this. A written, signed document will stand up in court and the prospective employer knows it and will be less likely to back out.

Even if they did, I wouldn’t trust them to keep me around long. They now know you are willing to leave and are probably looking for other options so you will be first on the chopping block if they need to do any cut backs/downsizing.
