If this ever happens again, say they have to put all the change in rolls before paying with it. Have your work make it into policy.
I realize it's still legit currency, but stores should have policies against that. There are several stores that won't accept bills larger than $20, so there should also be policy that coins be rolled or won't be accepted for an amount larger than so much. In which case, the customer should be required to go to customer service or a bank and get it exchanged for something more manageable.
