Today, me and some friends had home-made burgers for lunch. The guy who did the cooking later insisted that spitting in a frying pan is a perfectly acceptable way of guessing the right time to add the oil. FML

This might be a stupid question, but why add oil? Burgers usually have enough fat in them to start with.

To prevent them sticking to the pan when you first put them on, they have plenty of fat in them but it's all solid until it heats up.

I've never had that problem before. If you're using fresh patties, there's enough moisture in them already. If they're frozen, the ice crystals melt pretty darn quick into moisture. Unless the pan's too hot to start with.
