I'd tell him "see you at the tribunal" and report his ass.
So....the business would fail without you. Sounds like you have the upper hand. Maybe you should be asking for £15 an hour (as you do most of the work) and go on strike and don't work until it's paid (and agreed in writing). Or Take him to a tribunal for theft of wages and go on strike. He needs you. But you don't need him. You could find a new job elsewhere.

Get a new job and tell him to go **** himself when he starts throwing a tantrum about having to actually work. You can take him to tribunal for refusing to pay minimum wage but it being your Dad? Might be a bit awkward after. Have you tried complaining to your mum/his wife? It's her income he's risking with all this...
I'd advise you to find a new job, sounds like a bad work environment.
