Play it off. Pretend to recognize him and be like "why haven't you answered my text messages??" And just act like he hasn't been receiving them.

My guess is that he is trying to get you to recognise him, so he could just have his answer, as to why you didn't ever answer. Maybe he was just really in love, and felt betrayed. Or he's just a really insecure guy, who would like to know why he got ditched. Doesn't make it okay for him to stalk you though. Talk to him, or watch out he doesn't start following you outside of the gym. Things could escalate of he does.
