They don't turn off wifi, your phone does after its been locked for a period of time. This happened to my in laws too.

Streaming apps have a setting whether they will stream on wi-fi only or also on the cell network. I imagine you specifically enabled it to work on any connection, so ...

You should always set your phone to turn off after a couple hours, even if its not for the wifi, it could still bother other people when you leave it on like that for the whole night
