Sorry OP, this is normal. I went for a month with a large group, came back, and everyone had food poisoning or bad stomachs for at least a couple of days :(
Might not be poorly prepared food. People with very different diets have widely varying combinations of microbial species living in their digestive tracts, so when you switch diets radically, your body may not be able to handle the new food like it used to. Maybe your American microbes could digest African food, but your digestive ecosystem changed over your stay, and it wasn't so smooth transitioning back.
