Why is everyone assuming the cheater is a "he"? That might not be the case. Don't call things of jus yet. Talk to your partner about in a mature manner and see if you can work through it first before calling off the entire wedding. If your partner made this mistake once, don't let it happen again. Ever.
"Fiancé" is male and "fiancée" is female. So yeah, the cheater is a guy, not that it makes any difference.
Fiancé is the word for the man and fiancee when it's a woman. Don't know if it's actually used like that, but it's what internet just told me!
