There's always that court where you can fight
fight it in court. most judges will actually penalize the cop for wasting their goddam time with this crap. I had a friend go because a cop gave him a ticket for going 5 kms over the speed limit and the judge told the cop if he ever wasted his time with another bullshit ticket then he'd be the one getting fined.

Idk what state you're in, but most likely you can just go to the court clerk and provide proof of insurance. Worst case scenario is you'll have to go to the court date with proof, other than that, the cop can't do much. I've been in a similar situation when I was carrying expired insurance. Cop checked the policy and saw it was all good, still hot a ticket, but he said just show up with a new proof of insurance and they'll write the whole thing off.
If it's really not expired then it will get thrown out in court sorry he was an ass. Some cops are amazing while others think they are above the law and better than us.
Probably a slow day for him
