As payback, tell your parents you're going out with friends at a bar to celebrate 21, to make them imply that you're drinking. Text them that you're having a great time and the drinks are great. Once you had your fun, text them you're coming home (Stay at a friend's house), but don't come home at all so they will be scared shitless, and don't answer your phone if they call you. Come home late the next day and enjoy their reaction. But when you leave, don't actually go to the bar. Go see a two or three hour long movie with your friends and spend the night at one of their places, as long as they and their family knows about the plan.
This could have been funny if their intention was to be pains in the ass and then leave a massive, way beyond normal, tip (and celebrate for real another time). I'm sorry they thought it would be funny to ruin your birthday. Some families don't behave like family should.
Umm, tell them! Tell them that "I felt angry and sad because working on my birthday was not something I wanted to do, especially since being 18 is seen as the 'coming of age' year." Or something similar. Convince them that it was your birthday, give them insight to how you felt, and hopefully they will understand.
