I find it interesting that he wouldn't want to read a paper that he assigned? If your teacher doesn't like reading papers, perhaps he should teach a different subject.
A zero 0% is an incomplete. An F would be a 50% or more depending on district. Fix your error and move past it.

I'd seriously consider appealing that result to the principal or another higher up. That sounds really inaccurate and quite frankly, unprofessional.

That is quite possibly one of the most unprofessional things I have ever heard of a teacher doing. Go talk to the principal, asap. Don't let your teacher get away with being a lazy jerk.
Since the teacher can't even be arsed to give it a proper rating or a proper reasoning other tl;dr then take it to the principal.
If you had a page length or word count you were supposed to abide by, then you deserve the 0% for not following directions. If the teacher did not give a page/word length, take it to the principle (or guidance counselor). Make sure you give them a copy of what was written and keep the original. That is wrong of your teacher. I would also be asked if I could move to another class because the teacher could be vindictive.
