I talk to customers on the phone. People wear shorts and printed t-shirts to work. Several people walk around without shoes - including one of the owners. I, on the other hand, tend to dress up a bit. Image isn't the issue. This is the same place where, over 20 years ago, I decided to wear a skirt one day and one of the owners commented "she does have legs!"

At a certain age men are supposed to grow up. THAT doesn't happen all the time either....
Don't listen to them. As long as you can manage your hair and you feel awesome about it, keep it however you want. Other people shouldn't matter.
Does he also ask where babies come from?

Show it anywayWhen I picture an old lady I think of someone jolly, bit round, down to earth and with two long and healthy silvers plaits.... I like that look for an old person. I might have that when I'm a grandma or something. Not that you're that old OP, but if you can have long hair when you're elderly, you can have it when you're middle-aged or however old you are.

Show it anyway'only hair' - Hair can be very important to people - a part of their identity, kept long for religious reasons, makes someone feel safe. Long hair can absolutely be fresh and current as well. It shouldn't impede on professionalism.
There was an FML about someone complaining that the waiter shouldn't have told her not to eat too much bread because it'll make her fat. Coming to this, it's her boss that was recommending. I'm saying OP can take it under advisement and try something out if she respects the boy's dress-sense and as you say, it doesn't contravene her religious guidelines. If anyone keeps the same hair-length to feel safe, then it's up to them. But sometimes people don't change unless they're prodded.
45, you're kidding right? What year do you think this is, exactly?? Should her boss tell her how to dress next? Or how to do her makeup? Better yet, maybe her boss should suggest she quit and go back to the kitchen. Unless her long hair is a health violation (not tied back in a food-related job), he can suck it! He has no right to suggest she cut it, and his comment is completely inappropriate. I agree with a previous commenter that this could be taken as harassment as it can create a hostile work environment. Not only is he calling her old, but is commenting on her appearance in a negative way.

Forget them... I have hair that's thick & healthy & stops 4 inches from the back of my knee. They'd have to shave it off of my cold, dead head before I quit for some ridiculous social stereotype.
