That's actually not too dissimilar from how my MIL found out that she's deathly allergic to seafood. The first time she ate fish was on a date where the guy ordered for her (I guess it was "that" kind of restaurant?) and she went into anaphylactic shock. Asked by a paramedic what she had eaten, she replied, "I don't know; ask him!" In response to the inevitable questions: This was many years ago; she recovered; yes, she has a medical ID bracelet and carries epinephrine.

One of my family went 20 years thinking they were allergic to lobster when it turned out they just eat lobster that wasn't prepared correctly. Finally found out because they went to an allergy specialist and got tested. If this is your first time cooking lobster that could be the case, or he is just allergic.
My empathy. I Grew up eating Crab and Lobster, then one night my wife and I were out at a place that had crab legs as part of the salad bar, so I loaded up. And then I Swelled up. Since turning 30, it has been a roller coaster ride of what I cannot or dare not do anymore. Just you making him lobster makes you a Keeper if it's any consolation.
Well, on the bright side, you never have to buy lobster for 2 again! My boyfriend is actually highly allergic to shellfish as well, and most shellfish is my favorite food so I never have to share! I do have to be careful when cooking it along with something else but not to bad overall.
