Should of just told him you wanted to finish it, he would have come back or a bus boy after you left would have cleaned it, but a wash of the hands it's gone so not too big of a deal

I'm curious, is that normal behavior for waiting staff in the US? I've been told that you usually leave quite a bit quicker (as in, you usually don't linger after you've paid) but here, it would be considered to be incredibly rude for a waiter to try to take a dish that someone's not finished eating yet.
Long as it looks empty or finished with it, yeah; it is normal. The higher class restaurant the more sophisticated the waiters/waitresses.
Leave a generous tip and an apologetic letter. I'm sure the money will make up for a little spit.
