Yes, because people really control whether or not someone manages to hack their email. That having been said I do still feel the Professor should allow the OP to take a make-up test.

Talk to the professor. If he won't let you retake it, look up the grievance procedures at your university. For us the general policy is to then go to the department, and if still not satisfied there's an Academic Hearing Board that will hear complaints. In a situation like this, I'm pretty certain one of those levels would give in and force an opportunity to retake the test.

Should the professor not be sympathetic due to the fact nobody lives on their emails anymore? I think he should postpone the test.
The professor basically has to offer a second sitting of the test (but not for the hacker, if found), especially since he acknowledged the counterfeit email in his follow-up email.
