Reminds me of when a girl I know was convinced she caught diabetes from her boyfriend. She didn't even have diabetes, she just pretended she did. She's really strange and lies a lot though, so it was probably more her lying problem than ignorance/stupidity like the girl OP is seeing.
I agree with the good portion of people that she may not have been educated about epilepsy prior to meeting you. Give her a chance after explaining it, and if she still doesn't get it, then I'd move on.
