Iced chai tea latte. Om nom nom nom! Also, I have to agree with #19. If someone *emails* me and asks me on a coffee date, my response would be the exact same as the OP's guy... "coffee date" = drink coffee and chat at a coffee shop. If she had called him, at least she could have said "well you don't have to drink coffee," and then he would have had to clarify what he meant. Email is way to ambiguous to be certain what he was actually thinking. That's why you always ask someone out with at least a phone call!
honestly, if he was into her he would have given another suggestion. you know like, i don't like coffee but how about ___________ (fill in suggestion). but he declined it right away and left no window of opportunity for it to go on, so yes, he rejected her.
