If you are creative and do a lot of research you should have time to find another caterer.
Yikes that's a sticky situation you got there. I would've done things a lot sooner, but for now...I would have your fiance taste the food too if not already done so, then maybe she'd see your point and you can both take your future mother in law aside for a little chat. Or maybe you can just say, "Thank you, but I think we'd rather have a professional handle things."
Actually OP, you might still be able to book a caterer. I work for a small catering company and have had people talk my boss into booking their weddings, which are usually only a few days away. Try calling up some local wedding planners for good catering references and hit them up. You might not be able to get a customized menu, but most catering companies have a bunch of "example" menus that they build off of all the time. Also, small businesses can be coerced into payment plans or even business trades. Good luck!
