You can sue anyone for anything here. If you couldn't, we wouldn't have shows like Judge Judy, Judge Joe Brown, Judge Alex, and Eye For An Eye.
I can see how this could be wrongful termination, but I really also can see your employers point as well. He is responsible for the safety of all employees, and your ex is clearly unstable.
I worked for an employment attorney. Press charges against the ex, and get a restraining order. Your boss, depending on state laws, ought to give you back your job, or can face a lawsuit. If that's not your cup of tea...do the same to her.
