My boyfriend's mom's birthday is Valentine's Day. He planned a night out for the two of us, but I insisted we go see her, too. I love pending time with his family. This is not a nightmare.

Wow! Um, no. Just no. That would not be cool. Also, very awkward. It's one thing when the two of you are having dinner with his parents because they wanted to take you guys out or something. Another story when a parent is joining you on a special/Valentine Day dinner.

Don't really understand how this is your boyfriend's fault, unless he specifically asked her to come. Perhaps before you go overboard and break up with him you could try, you know, talking to him or his mum about it. Geez.
