The best way to respond when someone makes a joke at your expense is to steal their joke and exaggerate it and make it your own. This does 2 things: Firstly it takes the power away from the person joking about you and you get credit for the joke. Secondly if you exaggerate it enough they will know it's a joke and this works better than denying it. so an appropriate response would have been something like 'I normally bring the whole family along too, but George wanted some alone time today'

I'm sure the guy knew your mum was joking, especially if you laughed along. Are you sure he was even looking at you funny in the first place? You could just be paranoid because you thought he was hot. I really don't see much weird about holding a stuffed animal and probably wouldn't look twice, unless it was unusually cute/awesome. I'm sure if it was that big anyone would assume you were either just given it or had bought it for someone else rather than thinking you brought it around with you.
