Unfortunately some people are just nuts and some people have real food allergies or sensitivities… My son was allergic to cows milk when he was an infant - most dairy products actually made him throw up as an infant. Eventually he grew out of it, but his food preferences were influenced by his early allergies… I understand it was embarrassing and likely pointless the degree your date went to about her food at the restaurant. But you weren’t the cook nor responsible for her instructions so it wasn’t really your problem (at this point). But I would agree that numerous food “sensitivities” are not exactly a plus in a potential mate. But I wouldn’t make that a “make it or break it” issue in itself.

yeah at that point I would have probably told her flat out that if she needs that many changes to a dish, she needs to just order one she likes. I'm a server I don't tolerate that shit

I hope you didn't give her a good-night kiss at the end of the date. Her mouth probably held the bodily fluids of the waiter and most of the kitchen staff.
