I'm not going to insult OP's intelligence by assuming that they picked buying them because they were too dumb to think of recycling. Instead, I am going to guess that the issue is that OP not only doesn't have friends and family to obtain coke bottles from, but the insanely short time given. I'd take the time frame up with the teacher, and then the principal or head of the art department, OP. Point out that, given the nature of the project, it would be against the meaning to go out and buy probably dozens of gallons of coke to meet the deadline. Add in that, regardless of whether you used purchased or recycled, the bottles would need washed inside and out before being used, unless they want to practically roll out the red carpet for roaches and the like- and as such, the timeframe is unrealistic. Finally, ask if it would be possible to do a bottle drive type thing, and have students drop off bottles in the art room or other designated space. If enough students are upset by the demands of a project, chances are that someone in charge will eventually work to make it more reasonable, if only to shut people up.
