Clearly the felt it was better to have you move on now before they became too reliant on you and faced the risk of you with them at a less opportune time for them. With the proper severance package and references move on Their decision is actually sound for both you and them

I hate when employers just assume that. If there was a better job available in the first place, it would have been my first choice, however a job is a job and I'll take anything I can get. Hopefully they'll understand and let you back on the position, OP! Job searching is rough....

Just tell them you're not looking for a promotion, try and keep that job, and the next one you find get out of there because you know now that you work harder than you should and deserve better pay.
Fired because over qualified? Take it as a positive point and apply to somewhere better. Though losing an existing job does suck.
