I eat vegetables but I honestly couldn't stand more than a week on a vegetarian diet. So everyone saying to suck it up, imagine if this was reversed. A vegetarian stuck with a family that only ate meat (however unlikely). Everyone would be up in arms about the vegetarians right to not eat meat. How about OP's right not to eat vegetables?
Okay, for everyone saying, variations of "stop being a picky eater and just grow up,"- look up Selective Eating Disorder and/or Avoidant/Restrictive Food Intake Disorder. Because if OP has it, you are essentially telling someone with a disorder to "just get over it." Even if OP DOESN'T have it, the family should have informed OP that they were vegetarians just like OP should have informed them that they can't tolerate vegetables. Especially since the host family could get in major trouble if OP winds up having health issues because of the clash in diets.

Have a conversation with your host family and see if they can accommodate you. If they can't or won't then work with them to sort out the problem so that you can switch your placement with a vegetarian student. It's quite possible that your host family requested a vegetarian student andi am sure that vegetarian students make their dietary preferences known when they sign up. This could be the result of a simple clerical mix up that's easily resolved. You'll never find out if you don't ask.
Stuff yourself on pasta, bread, french fries, omelette, pancakes etc. while eating at home with the family. A family of vegetarians just means there's no flesh - and I might make a wild guess but I think your daily diet at home doesn't consist of 100% meat? And as far as I know you can always eat outdoors what you want to eat, so I really hope you're living in a city where you can spoil yourself on steak ;-)

The problem I have is I don't like onions, bell peppers, and tomatoes and mostly everything has one or more of them in it so it can be tough to find something that you can eat. If your like me I foresee a LOT of rice in your future.

How does one "hate vegetables" though? I mean, I get that you might not like certain vegetables, but there's so many vegetables and so many ways of cooking them that I can hardly imagine you wouldn't be able to find some that you like. Not eating any vegetables is quite unhealthy, so maybe instead of complaining about this, you should take it as an opportunity to become a less picky eater. You can always go to a restaurant if you feel like you need meat from time to time.
On the bright side, this may lead you to find a vegetable that you do like, not everything is just uncooked greens.
