Plenty of people who aren't Christian celebrate Christmas, and some people who are Christian don't celebrate Christmas.
I didn't realize my husbands family celebrated Christmas until I went over when we were first dating and asked. when people are in a different religion it can be hard to know, but often people celebrate Christmas. Don't feel to bad OP
It's not the lack of awareness OP needs to feel bad about, it's the fact that she went in and changed someone else's property without consultation or permission.
I can almost understand this because if he's non-practicing then things like high holidays and diet restrictions wouldn't come up, but at the same time, how did you never ask "What does your family do for the holidays?"
I feel like this is something people know before they start dating and reach a stage where they have spare keys to each others homes etc. Either that or there's a decent chance that his last name would have given it away.
