If they can sell the car, it is probably in their name and only nominally OP's vehicle. Seems like they let her use one of their cars, and she has come to think of it as hers.
If they own the car, it is well within their rights to take it away. Perhaps you should talk to them and find out what the problem is. While they may have deep seated prejudice, they may also have the benefit of experience and see something you don't. My parents took my car away when I moved in with my then fiancee. I ended up years later divorced and bankrupt thinking maybe I should have listened to my dad.
Unfortunately—since it's theirs—they are allowed to do that even though its more drastic than it needs to be.
If your under 18 then this is a little extreme but I see where they are coming from but it could be handled better. If you are an adult then fyl but clearly you need to get out.

I feel like this would be different depending on your age. If you're like 16, YDI. If you're like 25 and BOUGHT the car yourself, then FYL.
I think that the "21" in her name is her age. So she is a grown up, and her car, even if it's a gift, should'nt be taken.
