If you have a health problem, I think they are required to provide reasonable accommodations, i.e. a chair or stool. If you talk to your boss about this directly, they should be reasonable about it.
This is the USA. We place appearance above functionality. It doesn't matter if work is less productive when employees are fatigued or dehydrated, you had better work without showing even the slightest hint of fatigue to a customer, and with a huge grin on your face, without going a single minute over 40 hours a week in spite of the work load we assign you, or you're getting written up. And you want to follow safety rules? Hah, no, we just post those rules up so we can blame you when something happens to you because we wouldn't let you follow the safety rules - oh, and don't try blaming us, we've got lawyers and money - and you don't.

When I was a bus person I got yelled at for cleaning the tables too fast (even though they were done right), and for sitting in the booths as I reached to wipe the tables.
