why would you even be trying to cool down hot oil?
next time think. oil gets much hotter than boiling water. water boils at 100 degrees C / 212 degrees F, oil easily gets to 300 to 350 degrees F. so when you put water into oil that hot, it flash boils to steam. steam, being a gas and not a liquid can expand. but water is also heavier than oil so it sinks as it flash boils. the steam, expanding under the oil, makes a terrible mess. science class rules.
