Call the wedding off before it's too late.
People with anger issues need therapy. If you like her for other reasons, take her to therapy and see if that helps. IF she is not willing to go through therapy, say that you do not believe this will work and break off the engagement. You do not want to have a bad marriage with someone who is constantly angry. Try to help her, if she refuses to get help or it does not work, amiably end it.
How long have the two of you been together? Either she misunderstood what you said or she has been pretending she has no anger issues until now (now that she thinks the relationship between you two will be safe since you are both engaged). Whatever it is, you may want to rethink about this whole marriage. Even if she is a good person, for someone to react so insensitively and hurt another person without a second thought, that can cause a serious strain to a relationship.
