You did the right move, just passively waiting for 30 minutes would have signaled desperation, which could have been a turn-off for her. She calling you back validates that she liked the way you handled her "fitness test".
I'm a girl and I don't understand why anyone would take so long and be so inconsiderate. Perhaps she took a long dump and then completely redid her make-up AND texted a few friends to tell them how the date was going?

She could have stomach problems. When mine flares up, it can put me in the bathroom, with excruciating pain, for up to 30+ minutes. However, I've always warned dates that I have these problems and not to worry. My now-fiancé worries about me still lol. Anyway, of that were her case, she could have warned him. Or, she may have been too embarrassed. I mean sure, it's embarrassing but I'd rather them know what's up than leave them in wonder like OP.
I also have stomach problems that sometimes flare up and I'm too self conscious to even talk about it to my BF, who has the same condition. However, if I were OP's date and had such problems, I would have done pretty much anything to avoid a flare during the dinner or I would at least have texted explaining there was a long waiting line or something like that.

I think you were totally in the right! (which I seldom say on this site, lol) 30 minutes is just crazy to be in the bathroom on a date. Kinda thinkin' she left then tried to turn it around on you.
Maybe her nerves got to her and she couldn't help how long she took. Some people are unfortunate that way
