Every club I've ever been to you had to go to the bar to order drinks. There were no waitresses or waiters. Next time verify who is taking your order and if there is a queue at the bar most likely they don't have servers.
I see you're from Canterbury in NZ, was it The Running Bull? They're chronic for taking extra money, same for Revival Bar!
Is it common in NZ to pay before receiving drinks? I've never been to a club, bar, or pub that had you pay before you were served. Interesting. Tell whoever's in charge so they have security on the lookout. Linger near the bar so you can spot her. When you do, threaten police involvement (you have a witness). If none of that works, chalk it up to experience and enjoy your first night out as a wiser person.
OP: What lessons have we learned here today? That's right; place all drink orders within 50 cents of the bills you plan to use to pay for them. That way the most you are out is $0.50 and $35 worth of drinks you can't down because you are passed out on the floor already. But hey, at least they won't make off with your change. As a side note, you should never ask a stranger for change. You should learn to accept them the way they are.
It's ok, you can always rob them the next day.
