If this is the first time his skin has peeled like that after sunburn he should be all fine it's normal for everyone in Florida to go through that once, after your skin peels you learn to put on a crap ton of sunblock, although it would not hurt to see a dermatologist if he has any pain or has marks or misshaped moles in the peeled or burned areas because it could be cancerous, but can be dealt with if found early
