Today, my roommate, who has bipolar disorder and refuses to take his meds, tried to stab me with a kitchen knife because I threw out his moldy cheese. FML

I would call the police. They can document everything that happens. They might have to admit him to a psychiatric ward, and then he will be mandated to receive treatment. He will have to take his medication if a psychiatrist says he has too, or he might have to stay there longer.

even when admitted to a psychiatric ward, they can still refuse to take their meds. the nurse cannot shove them down their throat, even if the psychiatrist says they HAVE to take their meds.

Do you know his family? If so contact them, sounds like he needs help, plus you're in a dangerous situation

Call the police & if the lease is in your name, kick him out. If it's in his name, pack your stuff & stay at your parents until you can find a new place to live. If he refuses to take his meds, that's dangerous & you don't have to put up with it.

if they refuse to take their meds you need to first call the authorities. that's very irresponsible, and someone, if not you, can end up hurt. and second, get a new roommate.

To op Some cheeses do look moldy but are fine to eat like blue cheese and he is off his meds and a lot people like they go crazy with out their anti crazy pills I know I take my anti depression every day so tried to get him go back on them in friendly way
