Congratulations - you deserve the great progress you've made! Don't obsess over the weight as a number, focus more on your general physical condition. You're putting on muscle mass and losing fat - that's 100% a good thing!
It's impossible to put on six pounds of muscle in one week, but it's almost impossible to put on six pounds of fat in one week. This is almost certainly just water weight. To get the most consistent weights, weigh yourself when you first get up in the morning, before ingesting anything at all. That's the lowest weight you'll have for the day, but it's also the most consistent measuring point for hydration level.
