In the UK it is "Challenge 21 / Challenge 25" depending on the shop meaning you have to look above 21/25 in order to not be asked for ID
FYL man...
Some bars and liquor stores do not play around and are required to ask for proof of age no matter how old the person looks. But your boss is definitely an idiot for thinking that somebody who's obviously a senior citizen may or may not be one.

I was in the Arizona Airport several years back in a bar where a man (clearly over fifty) with his significant other, berated the waitress for about 3 minutes over her asking for his I.D. There was a sign not 5 feet from him stating the bars policy to card EVERYONE, it was even on the menu. I still think it's completely ridiculous, but someones judgement could be way off. Use to be a time where they carded if you looked under 25, then under 40, now they just card you everywhere to be safe. Sorry you got fired for assuming the guy was a senior citizen. He could have been plant to test you or a real senor citizen who probably would have been offended at you asking him to prove he's old. Either way, you might be better off without that boss and that job.
I am sorry but by law if he looked more than 50 ( ******* gray hair) you don't need to asl an I.D. Therefore you cannot be fired. I worked at BevMo in California.
I'm pretty sure there is no state laws saying you don't need to card someone who looks over a certain age, it's more store policies, because if you sell to a minor no matter how old they look the store can still get fined and possibly have their liquor license revoked.
It depends on your state. In NY the ID pretty much everyone. Most liquor stores, gas stations, bars, and grocers have scanners that they waive your id in front of to check validity. I have been going to the same liquor store for over a year- know the sales personnel by name, and they still ask for, and scan my ID. Every time. Clearly I am old enough to purchase alcohol. It's just the way it is. I think it has more to do with data mining than anything else.
