That's because of how gene traits work. Your parents can have 1 recessive and 1 dominant gene, so only the dominant show. But the two recessives can go to the kid which is random, which gives them the recessive trait. Aka the blue eyes, freckles, and dimples.
You really need to take biology and learn that genetics has recessive genes and dominant and it might not be showing blue eyes are recessive so it couldn't have shown for generations!
It could just be recessive genes in your nephews' assumed parents.
